There are a number of common food mistakes that costs dearly in money, health, and time. What are the major mistakes made? What changes do you need to make? Here are some food mistakes to avoid.

1. Last minute meal planning or no planning at all. The results: not knowing what ingredients to have and/or not having the right ingredients.

2. Bad planning for shopping; not knowing what's on sale, what's in season, what you are out of, etc. Result? One buys what isn't needed and spends too much on what is needed.

3. Convenience spending/cooking. Examples are; TV dinners, chicken already cut up, items in ready-to-use/serving sizes, etc.. This buying habit costs lots of money. Whole chicken at 49 cents a pound is much less than skinned breast at $3.89 a pound.

4. Unplanned trips for missing ingredients. Buying an item at the last minute means paying full price and buying other items not needed just because you are there.

6. Improper storage equals wasted food. A good habit to get into is to properly store food the moment you get home. Make it a family event. I call it "divide and conquer". 7. Trying too hard can result in giving up. Changing the way you cook or buy can be exciting and frustrating, especially if one attempts to do too much at one time. If you want to try stir frying, don't try to do pressure cooking at the same time. Frustration causes some to quit.

8. Surprise! Company's here! Unexpected company can put the budget in a sling. What recipes can be fixed ahead of time and cooked at the last moment? What foods feed a crowd that can be stored year around?

9. Bad diet/bad eating habits. For whatever reason people often just fall into bad eating habits. Unhealthy foods costs more. Eating too much of certain foods costs more. By selecting high fiber recipes for your holiday menu, you can offer foods that may lower the absorption of fats so you can avoid the dreaded holiday weight gain. Maybe you won't find yourself gorging on the usual array of fattening cookies, pies and brownies.

Black Bean Hummus Appetizer 8 servings

INGREDIENTS:

1 clove garlic 1 (15 ounce) can black beans; drain and reserve liquid 2 tablespoons lemon juice 1 1/2 tablespoons tahini 3/4 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 1/4 teaspoon paprika 10 Greek olives

DIRECTIONS:

1. Mince garlic in the bowl of a food processor. Add black beans, 2 tablespoons reserved liquid, 2 tablespoons lemon juice, tahini, 1/2 teaspoon cumin, 1/2 teaspoon salt, and 1/8 teaspoon cayenne pepper; process until smooth, scraping down the sides as needed. Add additional seasoning and liquid to taste. Garnish with paprika and Greek olives.

Total Fiber: 4 grams

White Bean and Red Onion Salad 6 to 8 servings

INGREDIENTS:

2 (15-oz.) cans cannellini beans (white kidney) 1/4 small red onion, peeled and thinly sliced 1/4 cup Extra Virgin Olive Oil 2 tbsp. Balsamic Vinegar 1/2 tsp. kosher salt 1/4 tsp. freshly ground black pepper Snipped fresh basil

DIRECTIONS:

Drain beans into a colander and rinse under cold water; drain well. Place in a medium bowl with onion. Whisk together oil, vinegar, salt and pepper and pour over beans; toss well to coat. Cover and chill for at least 1 hour, stirring occasionally. Top with fresh basil before serving.

Total Fiber: 5 grams

A Healthy Breakfast: Not An Impossible Mission

It’s a trite but true refrain that breakfast is the most important meal of the day. For most of us, it’s been about 12 hours since our last meal and our bodies need a good refueling. Yet, statistics show that as many at 50% of us don’t eat breakfast.

We’re too busy. We don’t like breakfast foods. We’re not hungry. We’re trying to lose weight.

Sad to say, none of those reasons are valid. There are many healthy breakfasts that can either be bought or made that are fast and even portable. There’s no law that says you have to eat breakfast foods for breakfast. You legitimately might not feel hungry in the morning, particularly if you aren’t accustomed to eating breakfast. But you should eat something, even if you make a fairly light choice, like fruit and yogurt. Trying to lose weight is the worst excuse of all. Study after study shows that people who skip breakfast end up eating more the rest of the day than people who eat a solid breakfast every morning.

So how do you get the magical mix of the right nutrients that will give you energy and send you healthfully into your day?

It’s not that hard, really. Spend a little bit of time thinking about what you like and then plan some healthy breakfasts. Here are some ideas to get you started:

* If you need something portable, the ever-popular smoothie is a good choice. Be careful when you purchase a smoothie at a shop, however, as some can have as many as 600 calories. You can purchase a good blender or smoothie maker to have at home and whip up your own smoothie in less time than it takes to stop at a smoothie store, and you’ll know exactly what’s in it.

* For an even faster breakfast, try making some breakfast burritos and keeping them in the freezer. You can use regular or whole-wheat tortillas, scrambled eggs (either whole, all whites, a mix, or an egg product), some veggies like peppers and onions, and soy sausage. These freeze beautifully. Pull one out, and while you’re pouring your coffee, it can be heating in the microwave. Add a banana or apple for on-the-go dining.

* Cereal is a fine breakfast, as long as it’s not the only thing you eat. Consider adding some banana or blueberries on top, or fixing it with soy milk for a healthy dairy addition. Otherwise, stick to skim milk.

* If you don’t like breakfast, consider making a peanut butter and jelly sandwich on wheat bread. Grab a banana on the way out the door. Have some leftover vegetarian pizza from dinner? That’s a fine breakfast, though you will want to add a glass of milk or some fruit to round it out.

* Trying to lose weight? Breakfast might be the easiest meal to fill up without using a lot of calories or fat. Have oatmeal with soy milk, or a high-fiber cold cereal. Consider a homemade version of a fast-food sandwich. You can fry up an egg, add a slice of Canadian bacon and put the two into a toasted English muffin for a 200-calorie, filling breakfast.

Healthy Cooking Tips from My Chinese Kitchen

Because of my young children, I have leaned towards healthy cooking choices. In addition, my husband who always eats out due to his frequent business meetings, desperately needs to lose weight. Being a Chinese and growing up with a mum who likes to cook, I have been educated in more ways than one on the various ways to whip up a dish. The following are some helpful tips that are practiced from my own kitchen.

The major thing to keep in mind when cooking is what hurts the foods and takes the nutrients out of them. You can eat a complete meal and end up not having adequate nutrients in any of the foods because of how you cooked. The major types of cooking that will burn away the vitamins include frying, boiling, saute methods and microwave. It is important to consider these methods before deciding on how you will cook your food.

One of the better methods used in preserving the nutrients in food is steaming. Steaming will actually preserve the vitamins and minerals that are in it. Because you don't have to add any oils or fats, it can also help you with taking away things that you don't need. A medium sized fish takes only 10 minutes of steaming time. It can be really that fast.

Boiling is also another healthy cooking method. However, do not overboil vegetables as this will kill all the nutrients and enzymes in them. If you need cooked vegetables, boil the water first. In boiling water, put your vegetables in for about 3 minutes. For some taste, you can always make a sauce to pour over the boiled vegetables.

Another thing that you should consider when cooking is what you are putting into the foods while they are on the stove. For example, adding extra salt can lead to a change in your blood pressure over time that isn't necessarily healthy. In relation to this, you should stay away form flavors and ingredients that have high sodium or fat as part of the recipe. Use the healthier sea salt if you really need to.

All of the foods that you eat should be balanced with raw fruits and vegetables. Having these on hand will help in adding to nutritious value in your diet. Adding a salad or different fruits is always important to your meals.

Quick and Easy Heart Healthy Recipes

When you have a history of heart disease in your family, it is important to take good care of your heart. Exercise is a main part of taking good care of your body, including your heart. Eating is important as well. But sometimes it seems like finding tasty food that is good for you can be difficult. And besides, who has time to prepare it? You do! Here are two delicious recipes that can get you started on the road to healthful and tasteful eating for your heart. And they're easy to make!

Baked Dijon Chicken (4 servings)

Ingredients:

1 pound boneless, skinless chicken breast (or you can use turkey), removed of visible fat
2 Tbl. lemon or lime juice
1 Tbl. course-grained or Dijon mustard
1/8 tsp. black pepper
1/2 tsp. minced garlic (from a bottle works nicely)

Preheat your oven to 375 degrees.
Rinse the chicken and pat it dry and arrange it in a glass baking dish.
Using a small bowl, stir together all the remaining ingredients and spread over the top of the chicken. Do this piece by piece.
Bake uncovered for 15 to 20 minutes. The chicken should be tender and no longer pink.

Rosemary Turkey With Mushrooms (4 servings)

This is a treat that you can serve company. It is an elegant and delicious dish.

Ingredients:

1 pound turkey breast tenderloin slices
1/2 c. chicken broth, low sodium
1/8 tsp. each black pepper and salt
1 Tbl. cornstarch
2 Tbl. balsamic vinegar
8 oz. chanterelle or button mushrooms; these should be cleaned, trimmed, and sliced
1/4 c. shopped onions or shallots
1 tsp. fresh rosemary or 1/4 tsp. dried rosemary

Rinse and pat dry turkey and set aside.

Use a small bowl to stir together broth, salt and pepper, and cornstarch. Set this aside.
Use vegetable oil cooking spray to coat a large skillet and place it over medium-high heat.
Add half the turkey to the hot skillet and cook about two minutes on each side. The turkey should be tender and no longer pink. Set aside and do the same to the other half of the turkey. Remove the skillet from the heat, and keep the turkey warm.

Add the vinegar and rosemary to the skillet. Scrap up all of the brown bits from the bottom of the pan. Then, put the skillet back on the heat and use it to cook the mushrooms and onions (or shallots). It should take about five minutes for the mushrooms to become tender.

Stir in the set aside broth mixture. It will take about three minutes for it to become a sauce, thickened and bubbly. Cook for two more minutes after that, stirring constantly. This sauce is served with the turkey. For an elegant tough, the turkey can be served on a bed of fresh rosemary.

Once you know what you can do to enjoy healthful meals without sacrificing the flavor, you can take better care of your body and of your heart. And that is a delicious proposition.

Eating Healthy - Back to Basics!

Isn't it funny how society in general believes that by eating healthy we must have to eat uninteresting and tasteless food. How wrong it is to believe this. However, I do think this fact is changing but not quickly enough. If we could just rewind a little to way back before fast food eateries and remember what it was like for most people we would see that back then people did eat healthy and enjoyed what they ate. Often you would grow your own vegetables and fruit. People made their own jellies, sauces and chutneys. No preservatives and no additives.

But as times changed and homes were built on smaller blocks cutting out veggie patches, people working longer hours, more convenience shopping close at hand and of course fast food eateries popping up everywhere we have become lazy! It is easier to stop for some food rather than make something at home. Who wants to spend their time tending a vegetable garden when they can just go to the local store and buy what they want? Having both parents working instead of having mum at home cooking nutritious meals and snacks our kids are stopping off and buying fast food. This same food that they have been seeing advertised so often on that dreaded television set that they sit in front of for hours.

With all the obesity, heart disease, diabetes and stokes that are quickly becoming a fact of life I think it is time for people to really sit up and take note that often all they have to do is exercise regularly and start eating healthy! To do this they need to think about what they are eating now compared to what they should be eating. First they need to cut down on sugary drinks such as cola. They need to drink more water and eat fresh fruit and vegetables along with lean red meat, skinless chicken, fish, lean pork and stop deep frying!

You must remember to eat breakfast lunch and dinner with fruit, yogurt, vegetables or seeds for snacks. Eat smaller portions and make sure you have plenty of fiber in your diet as well. This really is not hard to do. And when you do start eating healthy you will notice that not only will you start to look and feel better but also your food will look more interesting to eat compared to burgers and fries. These have no color or texture that is appealing. You just have to look at a plate of vegetables and you are awed by the wow factor of color.

Of course, by all means do have a treat once in awhile and if that includes a hamburger, fries, a soda or some chocolate then so be it but do it only in moderation. I know that I am a big fan of potato chips but I do have them in moderation whilst I eat healthily the rest of the time. Once you are in a routine of eating the right things and exercising regularly then you can afford to have these treats occasionally.

Heart Healthy Cooking Tips

Taking care of the old ticker requires exercise and a decent diet. There's simply no substitute for either. We'll leave the aerobic concerns to more informed minds and stick to the stuff that goes in the gut, namely the heart healthy foods everyone needs to stay fit, and the heart healthy cooking techniques that keep them that way. There's no substitute for either of those either.

Low saturated fat, low cholesterol dishes are what we're after here, and hold the butter and other added fats. The unhappy fact is that certain ingredients and preparation methods can add unwanted saturated fat and cholesterol to your food.

One can bake without fear, broil to the heart's content and microwave all day (just don't stand too close). Poaching is cool and steaming is even better. Seafood, chicken and vegetables are all good candidates for grilling. Lightly stir-frying or sautéing foods in cooking spray, small mounts of vegetable oil or reduced sodium broth are other healthy options. When roasting even skinless meats it's wise to place meats on a rack so fat can drip away.

There are lots of ways to cut out unwanted saturated fat and cholesterol in your diet that don't take the fun and flavor out of meal time. Butter is not your friend, what with its 8 grams of saturated fat and 11 grams of fat per tablespoon. Salsa is your good buddy though, with 0 grams of saturated fat and 0 cholesterol found in 1/4 of a cup. Creamy salad dressings are notoriously loaded with the bad stuff, while a reduced fat Italian sports only 2 grams of fat and tastes just as good.

There are many fine and tasty herbs, spices and condiments that can add zest to some of the more bland heart health dishes. Herbs include oregano, basil, cilantro, thyme, parsley, sage, rosemary. Cinnamon, nutmeg, pepper and paprika are all acceptable spices. Along with the reduced fat or nonfat salad dressing and salsa there are old standbys like mustard, catsup, horseradish, reduced fat or nonfat mayonnaise, reduced fat or nonfat sour cream, reduced fat or nonfat yogurt and reduced sodium soy sauce. That's to say nothing of Parmesan cheese, fruit preserves and simple red pepper flakes, none of which will harm you heart.

And there you have it. With a little planning, a bit of knowledge and a smidge of extra effort anyone, can eat right for their heart without giving up a healthy enjoyment of food.

A Perfect Cake!

Cake How often have you obtained what you considered a perfect cake? Isn't it often true that one day you will have baked a cake to perfection and the next just a passable cake that your family eats but does not devour with enthusiasm? One layer may be thin, the other thick or humped in the middle or burned on the edges, or again a loaf may have fallen in the center, the icing has hardened before you could spread it or even worse there was insufficient to cover the cake. These are the results that discourage most beginners, but all can be avoided by starting in the right way.

Cake when properly made of good wholesome materials is a nourishing and excellent food. While some prefer a light, fluffy cake and others a moist cake, everyone will agree that to be good a cake must be evenly baked, the crust thin and without cracks and an even brown, the texture fine and even-grained without being close and above all the flavour sweet and delicate.

To always have a perfect result without worry and effort is within every ones reach if certain simple rules are followed.

1. Plan so all materials and utensils are at hand when wanted.

2. Choose only the best materials. The best is most economical in the end.

3. Follow directions exactly as given.

4. Be systematic and accurate in all measurements so that results will never vary.

5. Use level measures for all materials.

6. If inexperienced choose a plain cup cake without frosting for your first attempt.

7. Remember that the baking of a cake is as important as the mixing and an oven thermometer is a good investment.

8. Layer cake tins and loaf cake tins come in various sizes, so note how much each recipe makes before deciding on tin to use.

9. All cakes should be baked in the center of the middle shelf__where the heat is uniform. Layer and small cakes should bake quickly in a hot oven and loaf cakes should bake more slowly in a moderate oven.

STANDARD BUTTER CAKE

1/3 cup butter, 1 cup milk, 1 cup sugar, 2 cups flour, 2 eggs, 3 teaspoons baking powder, 1 teaspoon vanilla extract, 1/4 teaspoon salt.

Cream butter thoroughly; add sugar a little at a time, beating well; add yolks of eggs and vanilla; beat well and add the milk a little at a time alternately with the dry ingredients which have been sifted together; mix well but do not beat. Mix in beaten egg whites. Bake in greased and slightly floured loaf tin in moderate oven 350 F. about forty-five minutes or bake in layer tins or cup cake tins in moderate oven at 375 F. about twenty minutes.

Makes one loaf 8 inches x 4 inches x 3 inches or three eight-inch layers, or sixteen cup cakes.
