Allow me to tempt you with the first few courses...&lt;br /&gt;&lt;br /&gt;&lt;span style="color:#cc66cc;"&gt;&lt;strong&gt;Black Bean Hummus Appetizer 8 servings&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="color:#cc66cc;"&gt;INGREDIENTS:&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 clove garlic 1 (15 ounce) can black beans; drain and reserve liquid 2 tablespoons lemon juice 1 1/2 tablespoons tahini 3/4 teaspoon ground cumin 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 1/4 teaspoon paprika 10 Greek olives&lt;br /&gt;&lt;br /&gt;&lt;span style="color:#cc66cc;"&gt;&lt;strong&gt;DIRECTIONS:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1. Mince garlic in the bowl of a food processor. Balsamic Vinegar 1/2 tsp. kosher salt 1/4 tsp. freshly ground black pepper Snipped fresh basil&lt;br /&gt;&lt;br /&gt;&lt;span style="color:#cc66cc;"&gt;&lt;strong&gt;DIRECTIONS:&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Drain beans into a colander and rinse under cold water; drain well. Yet, statistics show that as many at 50% of us don’t eat breakfast.&lt;br /&gt;&lt;br /&gt;We’re too busy. We don’t like breakfast foods. We’re not hungry. We’re trying to lose weight.&lt;br /&gt;&lt;br /&gt;Sad to say, none of those reasons are valid. There are many healthy breakfasts that can either be bought or made that are fast and even portable. There’s no law that says you have to eat breakfast foods for breakfast. You legitimately might not feel hungry in the morning, particularly if you aren’t accustomed to eating breakfast. But you should eat something, even if you make a fairly light choice, like fruit and yogurt. Trying to lose weight is the worst excuse of all. Study after study shows that people who skip breakfast end up eating more the rest of the day than people who eat a solid breakfast every morning.&lt;br /&gt;&lt;br /&gt;So how do you get the magical mix of the right nutrients that will give you energy and send you healthfully into your day?&lt;br /&gt;&lt;br /&gt;It’s not that hard, really. Spend a little bit of time thinking about what you like and then plan some healthy breakfasts. Here are some ideas to get you started:&lt;br /&gt;&lt;br /&gt;* If you need something portable, the ever-popular smoothie is a good choice. Be careful when you purchase a smoothie at a shop, however, as some can have as many as 600 calories. You can purchase a good blender or smoothie maker to have at home and whip up your own smoothie in less time than it takes to stop at a smoothie store, and you’ll know exactly what’s in it.&lt;br /&gt;&lt;br /&gt;* For an even faster breakfast, try making some breakfast burritos and keeping them in the freezer. You can use regular or whole-wheat tortillas, scrambled eggs (either whole, all whites, a mix, or an egg product), some veggies like peppers and onions, and soy sausage. These freeze beautifully. Pull one out, and while you’re pouring your coffee, it can be heating in the microwave. Add a banana or apple for on-the-go dining.&lt;br /&gt;&lt;br /&gt;* Cereal is a fine breakfast, as long as it’s not the only thing you eat. Consider adding some banana or blueberries on top, or fixing it with soy milk for a healthy dairy addition. Otherwise, stick to skim milk.&lt;br /&gt;&lt;br /&gt;* If you don’t like breakfast, consider making a peanut butter and jelly sandwich on wheat bread. Grab a banana on the way out the door. It is important to consider these methods before deciding on how you will cook your food.&lt;br /&gt;&lt;br /&gt;One of the better methods used in preserving the nutrients in food is steaming. Steaming will actually preserve the vitamins and minerals that are in it. Because you don't have to add any oils or fats, it can also help you with taking away things that you don't need. A medium sized fish takes only 10 minutes of steaming time. It can be really that fast.&lt;br /&gt;&lt;br /&gt;Boiling is also another healthy cooking method. However, do not overboil vegetables as this will kill all the nutrients and enzymes in them. If you need cooked vegetables, boil the water first. In boiling water, put your vegetables in for about 3 minutes. For some taste, you can always make a sauce to pour over the boiled vegetables.&lt;br /&gt;&lt;br /&gt;Another thing that you should consider when cooking is what you are putting into the foods while they are on the stove. For example, adding extra salt can lead to a change in your blood pressure over time that isn't necessarily healthy. And they're easy to make!&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Baked Dijon Chicken (4 servings)&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 pound boneless, skinless chicken breast (or you can use turkey), removed of visible fat&lt;br /&gt;2 Tbl. lemon or lime juice&lt;br /&gt;1 Tbl. course-grained or Dijon mustard&lt;br /&gt;1/8 tsp. black pepper&lt;br /&gt;1/2 tsp. minced garlic (from a bottle works nicely)&lt;br /&gt;&lt;br /&gt;Preheat your oven to 375 degrees.&lt;br /&gt;Rinse the chicken and pat it dry and arrange it in a glass baking dish.&lt;br /&gt;Using a small bowl, stir together all the remaining ingredients and spread over the top of the chicken. Do this piece by piece.&lt;br /&gt;Bake uncovered for 15 to 20 minutes. The chicken should be tender and no longer pink.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Rosemary Turkey With Mushrooms (4 servings)&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;This is a treat that you can serve company. It is an elegant and delicious dish.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1 pound turkey breast tenderloin slices&lt;br /&gt;1/2 c. chicken broth, low sodium&lt;br /&gt;1/8 tsp. each black pepper and salt&lt;br /&gt;1 Tbl. cornstarch&lt;br /&gt;2 Tbl. balsamic vinegar&lt;br /&gt;8 oz. chanterelle or button mushrooms; these should be cleaned, trimmed, and sliced&lt;br /&gt;1/4 c. shopped onions or shallots&lt;br /&gt;1 tsp. fresh rosemary or 1/4 tsp. dried rosemary&lt;br /&gt;&lt;br /&gt;Rinse and pat dry turkey and set aside.&lt;br /&gt;&lt;br /&gt;Use a small bowl to stir together broth, salt and pepper, and cornstarch. Set this aside.&lt;br /&gt;Use vegetable oil cooking spray to coat a large skillet and place it over medium-high heat.&lt;br /&gt;Add half the turkey to the hot skillet and cook about two minutes on each side. The turkey should be tender and no longer pink. Set aside and do the same to the other half of the turkey. Remove the skillet from the heat, and keep the turkey warm.&lt;br /&gt;&lt;br /&gt;Add the vinegar and rosemary to the skillet. Scrap up all of the brown bits from the bottom of the pan. Then, put the skillet back on the heat and use it to cook the mushrooms and onions (or shallots). It should take about five minutes for the mushrooms to become tender.&lt;br /&gt;&lt;br /&gt;Stir in the set aside broth mixture. It will take about three minutes for it to become a sauce, thickened and bubbly. Cook for two more minutes after that, stirring constantly. This sauce is served with the turkey. For an elegant tough, the turkey can be served on a bed of fresh rosemary.&lt;br /&gt;&lt;br /&gt;Once you know what you can do to enjoy healthful meals without sacrificing the flavor, you can take better care of your body and of your heart. It is easier to stop for some food rather than make something at home. Who wants to spend their time tending a vegetable garden when they can just go to the local store and buy what they want? Having both parents working instead of having mum at home cooking nutritious meals and snacks our kids are stopping off and buying fast food. This same food that they have been seeing advertised so often on that dreaded television set that they sit in front of for hours.&lt;br /&gt;&lt;br /&gt;With all the obesity, heart disease, diabetes and stokes that are quickly becoming a fact of life I think it is time for people to really sit up and take note that often all they have to do is exercise regularly and start eating healthy! To do this they need to think about what they are eating now compared to what they should be eating. First they need to cut down on sugary drinks such as cola. They need to drink more water and eat fresh fruit and vegetables along with lean red meat, skinless chicken, fish, lean pork and stop deep frying!&lt;br /&gt;&lt;br /&gt;You must remember to eat breakfast lunch and dinner with fruit, yogurt, vegetables or seeds for snacks. Eat smaller portions and make sure you have plenty of fiber in your diet as well. This really is not hard to do. And when you do start eating healthy you will notice that not only will you start to look and feel better but also your food will look more interesting to eat compared to burgers and fries. These have no color or texture that is appealing. You just have to look at a plate of vegetables and you are awed by the wow factor of color.&lt;br /&gt;&lt;br /&gt;Of course, by all means do have a treat once in awhile and if that includes a hamburger, fries, a soda or some chocolate then so be it but do it only in moderation. I know that I am a big fan of potato chips but I do have them in moderation whilst I eat healthily the rest of the time. When roasting even skinless meats it's wise to place meats on a rack so fat can drip away.&lt;br /&gt;&lt;br /&gt;There are lots of ways to cut out unwanted saturated fat and cholesterol in your diet that don't take the fun and flavor out of meal time. Butter is not your friend, what with its 8 grams of saturated fat and 11 grams of fat per tablespoon. Salsa is your good buddy though, with 0 grams of saturated fat and 0 cholesterol found in 1/4 of a cup. Creamy salad dressings are notoriously loaded with the bad stuff, while a reduced fat Italian sports only 2 grams of fat and tastes just as good.&lt;br /&gt;&lt;br /&gt;There are many fine and tasty herbs, spices and condiments that can add zest to some of the more bland heart health dishes. Herbs include oregano, basil, cilantro, thyme, parsley, sage, rosemary. Cinnamon, nutmeg, pepper and paprika are all acceptable spices. Along with the reduced fat or nonfat salad dressing and salsa there are old standbys like mustard, catsup, horseradish, reduced fat or nonfat mayonnaise, reduced fat or nonfat sour cream, reduced fat or nonfat yogurt and reduced sodium soy sauce. That's to say nothing of Parmesan cheese, fruit preserves and simple red pepper flakes, none of which will harm you heart.&lt;br /&gt;&lt;br /&gt;And there you have it. Plan so all materials and utensils are at hand when wanted.&lt;br /&gt;&lt;br /&gt;2. Choose only the best materials. The best is most economical in the end.&lt;br /&gt;&lt;br /&gt;3. Follow directions exactly as given.&lt;br /&gt;&lt;br /&gt;4. Be systematic and accurate in all measurements so that results will never vary.&lt;br /&gt;&lt;br /&gt;5. Use level measures for all materials.&lt;br /&gt;&lt;br /&gt;6. If inexperienced choose a plain cup cake without frosting for your first attempt.&lt;br /&gt;&lt;br /&gt;7. Remember that the baking of a cake is as important as the mixing and an oven thermometer is a good investment.&lt;br /&gt;&lt;br /&gt;8. Layer cake tins and loaf cake tins come in various sizes, so note how much each recipe makes before deciding on tin to use.&lt;br /&gt;&lt;br /&gt;9. All cakes should be baked in the center of the middle shelf__where the heat is uniform. Layer and small cakes should bake quickly in a hot oven and loaf cakes should bake more slowly in a moderate oven.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;STANDARD BUTTER CAKE&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1/3 cup butter, 1 cup milk, 1 cup sugar, 2 cups flour, 2 eggs, 3 teaspoons baking powder, 1 teaspoon vanilla extract, 1/4 teaspoon salt.&lt;br /&gt;&lt;br /&gt;Cream butter thoroughly; add sugar a little at a time, beating well; add yolks of eggs and vanilla; beat well and add the milk a little at a time alternately with the dry ingredients which have been sifted together; mix well but do not beat. Mix in beaten egg whites.
